Banana Mini Muffins
Ingredients:
- 3 ripe bananas
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tablespoons milk
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Instructions:
- Preheat oven to 350. Grease/spray mini muffin pan(s). This will make about 40-44 mini muffins.
- In large bowl (or mixer bowl) add bananas and mash. Add sugar, brown sugar, oil, eggs, milk and vanilla. Stir until well combined.
- In separate bowl, whisk (or sift) the dry ingredients: flour, baking soda, baking powder, salt
- Pour dry ingredients into wet and stir until just combined. Do not overmix.
- Fill muffin pans (1/2-3/4 full)
- Bake for 11-13 minutes.
- Let cool 2-3 minutes then move to a cooling rack. Store in sealed container.
